Carrot Cake
Ingredients & Procedure  

Preheat the oven to 350 degrees farenheit. Grease and flour an 8-by-11 inch baking pan.

Beat slighly - 3 eggs (Beat in until thick and light in color - 1-2 minutes)
1 cup sugar (Beat in gradually)
1 cup oil

When well mixed, sift together and stir in:
1 2/3 cups flour
1 1/2 tsp. baking soda
1 1/2 tsp. baking powder
1 tsp. salt
2 tsp. cinnamon
1/2 tsp. nutmeg or mace

Stir in:
2 1/2 cups peeled, grated carrots
1/2 cup chopped nuts

Pour into the prepared pan and bake for 40 to 45 minutes.


Frosting:
Beat together until finely mixed 3 oz. Cream cheese softened
1 tbsp. butter softened
2 cups confectioners sugar
Dash salt
Beat until spreading consistency 1-2 tbsp. hot milk, 1/2 tsp. vanilla
Frost then top with chopped nuts or finely grated raw carrot.
